This Crustless Sausage and Spinach Quiche with Italian chicken sausage, spinach and cheese is an easy and healthy recipe for breakfast, brunch, or dinner.

Spinach and Ricotta Quiche and Chicken Quiche are so popular on my site, but I often get asked how to make it crustless. For this low-carb version, I made this with no crust, with chicken sausage and spinach plus I used some light cream to give the eggs more of a creamier custard texture, as most quiches have rather than a spongier baked egg texture. This turned out delicious! It’s so easy to make and is perfect for any meal of the day. This Crustless Sausage and Spinach Quiche is so tasty you won’t even miss the crust. Skipping the crust saves on the calories and carbs, making this quiche low- carb, keto, and gluten-free.

How do you keep a crustless quiche from sticking?

Spraying the pie dish with oil is critical in preventing a crustless quiche from sticking. You can also line the dish with parchment paper.

Can a quiche be made the night before?

Yes, quiche is great for meal prep. You can make it ahead of time and bake it the next day before you’re ready to eat.

What should I serve with quiche?

If you’re serving quiche for breakfast, serve it with fruit salad or hash browns. For dinner, it’d be great with a nice green salad or your favorite roasted vegetables like Parmesan Crusted Delicata Squash or Roasted Brussels Sprouts and Shallots with Balsamic Glaze.

Italian Sausage Quiche Variations & Tips:

  • Swap the spinach for any wilted greens.
  • Use Romano cheese instead of Parmesan.
  • If you’d like a quiche with crust, you follow this recipe made with pie dough from the supermarket.
  • If you’d like individual portions, make crustless quiche muffins by pouring the egg mixture into a muffin tin. Bake at 350 degrees for 28-30 minutes.
  • Make Ahead – refrigerate the quiche for up to 4 days and reheat in the microwave.

Ingredients

  • cooking spray
  • 3 links sweet Italian turkey or chicken sausage, removed from casing (8.5 ounces total)
  • 12 ounce bag baby spinach
  • 1 cup grated light havarti or cheddar
  • 1/4 cup grated parmesan cheese
  • 2/3 cup 2% milk
  • 1/4 cup half & half cream
  • 5 large eggs
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • pinch freshly grated nutmeg

Instructions

  • Preheat your oven to 350 degrees. Spray a pie dish with oil.
  • Cook the sausage in a large skillet over medium heat, breaking up until cooked, about 5 minutes.
  • Add the spinach and reduce heat to low, cook until wilted stirring occasionally, about 7 minutes. Drain spinach well.
  • Evenly spread the spinach sausage mixture in the prepared dish and top it evenly with the grated havarti and parmesan cheese.

  • Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg.

  • Pour the custard into the dish and bake 35 to 40 minutes, until the center is set.

  2. I made this last week for dinner. Made some changes bad on what I had on hand. I only had noon fat milk so used 2/3 cup of that and added an additional egg. I had some mushrooms I needed to use abd threw in some onions, too. So good! Thank you for the recipe!

  3. Love this! I make them in large cupcake pan and freeze. Great to bring to work and warm in microwave. I haven’t been able to find low fat Havarti yet except in slices. So just break up the slices. Really yummy.

  4. Great recipe! I combined spinach & arugula as well as used cheddar cheese and pork sausage since that’s what I had on hand. 3/4 tsp made it a bit salty for my taste. Will cut back on that next time but def plan to make again!

  5. No matter what I do, I can’t open the recipe… I’ve sent it to myself via email and the link the brings me back to the site but not to the recipe. I’m pretty tech savvy and can navigate these sites pretty easily but you make it IMPOSSIBLE

  6. Made it, very easy, did all the steps in a cast iron pan, so just one pan, didn’t have Havarti or nutmeg, used shredded taco blend cheese, my wife had it as is I put red hot on it. We both liked it.

  7. Made this today. It is delicious. I wasn’t sure if I’d like it with all the cheeses (not a real cheese fan) but it was good. I used Jimmy Dean turkey crumbles and 2 Italian chicken sausages, as it was in the freezer and needed to be used. Will definitely make it again. There are not many of Gina’s recipes that we don’t like.

Will definitely be adding to my regular rotation – great for meal prepping for the week but I think it would also be a hit if hosting a brunch with friends.

  11. Delicious and so easy.  I used lean ground turkey and seasoned it with Italian Sausage Seasoning.  The cheese was 2% mozzarella and grated parmesan.  It was served with fresh fruit on the side.

    This was really yummy. I thought it was a little salty. It could have been the particular turkey sausage I used. Next time I will leave out the extra salt the recipe requires.

  17. I love this recipe well all your recipes.!  We have the cook books and your website. This is such a simple recipe and so good. The first time I made it with the cheddar thus tike with the Harvarti cheese. I do use lactaid milk and  it works perfectly .  I do add some garlic and onion to mine. 

  18. Delicious! I omitted the half and half and used gruyere instead of havarti, since that’s what I had on hand. Also instead of physically draining the spinach, I just cranked up the head for a few minutes until the liquid was mostly evaporated. I think this could serve as a great base recipe — I may try swapping the sausage for mushrooms next time to make it vegetarian.

  20. New here and have a question about Smartpoints. Its says it is 6 points for green but is this 6 points for the whole quiche or 6 points per piece? Also if it is per piece how do i know how big it should be? I just started WW and found this website and still trying to understand how everything works.

    Fantastic! I used only 2 sausage links and added a green pepper. Cooked the meat/spinach in a cast iron and then used the same skillet right in the oven to save on clean up.

  23. This is delicious! My husband and I loved it. I did not have the exact ingredients so improvised a bit. I used 2 Italian sausage links (had no turkey or chicken); I used cheddar cheese and leftover cooked spinach. Also added sautéed shallots. Great for breakfast, lunch or dinner. I make the crustless zucchini quiche quite often and this was a nice change and a keeper for sure. Thanks, Gina!

    This is absolutely  delicious! I tweaked the cheese and used 2 sams choice chicken apple sausages for 3 green smart points each.

    1. Delicious! I made some modifications because I did not have all of the exact ingredients. I used apple chicken sausage, spinach and broccoli, low fat cheddar, and added sautéed onion. My husband and mom loved it!

    I’d like to have this for my lunch next week. Is it safe to meal prep it tomorrow and have it for next 5 days?

    1. I use plain ff greek yogurt and a bit of water instead of half and half.
      Yummy and my husband doesn’t know.

  28. SOOO easy and savory. I made with spicy chicken sausage … maybe a bit spicy for me, but hubs loved it. Had to sub with mozzarella. AND because I did not carefully read the recipe 🙂 I only had 5 oz. of spinach. Still wonderful and I will make again.
    With all the sausage and cheese, this is very filling.

  30. This was so delicious! My husband and I loved the flavors. I made a few changes as I saw this pop up on my feed this morning and really wanted to have it ready after church today. I happened to have a bag of frozen spinach on hand and spicy Italian Turkey sausage. Both worked well, in fact I think I will always use the spicy Italian sausage.

    Wow this exceeded expectations. I only made it because I had all the stuff in the fridge. Used oat milk instead of 2% and it’s perfect. 

  33. This recipe is SO good and healthy. The only change I made was I used Beyond Meat sausage. I served it with a lightly dressed arugula salad. Delicious and the variations are endless. Keep the great recipes coming!

  34. Quiches are my go to any night I don’t want to spend a lot of time cooking. My husband loves them. No matter what I put in, sausage, bacon or ham with vegetables, it is good. Those with a salad makes for a nice and easy delicious dinner.

  35. I’m the oven right now! So easy. I did add bell pepper to up the veggies. I couldn’t believe that 12oz of spinach was the correct amount, but holy crap that cooks down to nothing!

      I made this with mushrooms instead of spinach. One of my breakfast meal preps along with the crustless broccoli quiche. Both are excellent.

    2. I have frozen quiches before and they turn out well. In fact I did so before I had my baby so I would have a quick meal. I am planning to freeze this too bc I need it for next week but only have time to make it today.
