Lemon-Parsley Potatoes in Foil

These baked or grilled potatoes in foil are delicious, made with baby potatoes drizzled with olive oil and spices, finished with lemon zest and parsley.  The perfect side dish for chicken, steaks, or anything you’re grilling! You can make just about anything in a foil packet! A few other foil pack meals I make, try these Cajun Shrimp Foil Packets, Meatloaf Foil Packets or Shrimp Scampi Foil Packets. My preferred foil for grilling is Reynolds Wrap Heavy-Duty Aluminum Foil which is a heavier gauge foil than standard Reynolds Wrap, which is perfect since you don’t have to worry about breaking or tearing, even with heavier foods and it protects food over direct heat.

Lemon-Parsley Potatoes

What makes these potatoes so tasty is the lemon zest and parsley, so don’t skimp! If you’re using larger potatoes, just cut them into smaller pieces so they cook faster.

How To Make A Foil Packet

  1. Tear off an 18” sheet of foil.
  2. Center the food on the foil sheet.
  3. Bring up the long sides of the foil, so the ends meet over the food.
  4. Double fold the ends, leaving room for heat to circulate inside.
  5. Double fold the two short ends to seal the packet.
  6. Bake or grill as instructed.

Ingredients

  • 16 ounces baby red or yukon gold potatoes, quartered
  • 1 tablespoons olive oil
  • kosher salt, to taste
  • 1/2 teaspoon garlic powder
  • black pepper, to taste
  • grated lemon zest of 1/2 lemon, 1/2 teaspoon
  • 1/2 tablespoon finely chopped flat leaf parsley
  • 1 piece Reynolds Wrap heavy duty foil, 18 x 18 inches

Instructions

  • In a large bowl toss the potatoes with olive oil, garlic powder, 1/2 teaspoon salt and black pepper to taste, toss to evenly coat.
  • Transfer to a large sheet, 18 x 18 inches of heavy duty foil on a flat surface.
  • Place the ingredients in the center of the foil. Form a packet by bringing the short ends of the foil together and fold twice to seal leaving room for steam.

To Grill Potatoes in Foil:

  • Grill, covered over medium heat 30 minutes, shaking the bag every 10 minutes so the bottom of the potatoes don’t burn. Open carefully and top with 1/8 teaspoon salt, lemon zest and parsley.

To Bake In the Oven

  • Bake in a preheat 400F oven 35 to 40 minutes, shaking the halfway. Open carefully and top with 1/8 teaspoon salt, lemon zest and parsley.

  1. These are great airfare 400 degrees for 20 minutes. I had the wrong foil and I was afraid it would split on the grill so I took a chance.

  2. I wasn’t sure how these were going to turn out, but they were so good! Perfect side dish to grilled chicken, and such easy cleanup.

  3. A favorite, love doing foil packs, used just a spritz of olive oil spray and some Penzey seasoning which is a salt different types of pepper, shallots garlic etc.-I wrap in parchment then foil around that to seal it better and baked in oven, maybe longer then it said as was doing other things but they were wonderful. I would do potatoes like this anytime.

  4. What I don’t understand though is if you use an 18″ by 18″ piece of foil, there are no sort or long sides!!

  7. How did you get 5 purple we for this? Isn’t the only points the oil at 0 pts. So 4 points at 4 servings would be 1 pt per servong.

  9. I made these in my air fryer. They weren’t cooking well in the foil, so I dumped them directly into the basket. They cooked much better- and were delicious! (Sorry, Reynolds…)

  10. Had this with steak last night and it was delish. Only change I made is mincing a couple cloves of fresh garlic as oppose to the powder.

    These are delicious. I made them to accompany a steak with mushrooms. I doubled the recipe (used one large heavy duty sheet on bottom and one on top) and cooked as directed. Delicious and will make again. 

    I also tossed them under the broiler for a couple of minutes at the end to get them a little more brown.

    1. I would encourage you to purchase a scale as I use mine all the time. My brand is Eat Smart. When I made this last night, I halved it for 2 and had about 6-7 potatoes, however it all depends on how small your potatoes run.

  15. I just made this in the oven and broiled an extra 10 mins.
    Beautiful flavor. It tasted like Greek style potatoes minus the organi. Perfection! I will definitely be making this often.

  16. I would like to take these camping. Can the potatoes be parboiled prior to packing for quicker cook time?
