We followed as directed but used Chex Mix crumbs instead of seasoned bread crumbs for a little extra spice. If you like to make Chex Mix, this is a good way to use up the leftover mix. Turned out well, but I’d add more salt, pepper and garlic powder next time. This is also great with bottled sweet chili sauce; Trader Joe’s makes a good one.

Really simple and yummy! Made this on a Sunday and then packed away for a week’s worth of lunches to have with fruit salad. Added sun-dried tomatoes (the kind in a pouch) because I had some leftover from another recipe and that’s yummy too. Can imagine feta, cherry tomatoes, pepperoncini, etc being good in here too.

This was an easy meal to make and tastier than I expected. I put the croquettes on top of mixed greens drizzled lightly with Duck Sauce (Sweet Chili Sauce would work too). I served broccoli on the side.

I love antipasto salad and this might be even better. Cut my broccoli very small. Had salami and turkey pepperoni so used that for meat. Added green olives because didn’t have enough peppers. If I was going to make for meal prep, I would not mix everything with dressing. 2nd day was good but was starting to get too mushy for me.

So this was delicious.

I did modify a bit.
Added mushrooms and grape tomatoes instead of corn because that’s what we had. Also added spicy sausage, fresh basil and oregano.

Love, love, love this recipe. It has become a family favorite so I make it regularly but always use more tomatoes & onions. Especially great when I can use fresh basil from my garden 🍃
